We pretty much have this fruit salad at all family gathering. It is simply wonderful!
4 egg yolks2 Tbsp. melted butter4 Tbsp. pineapple juice (reserve from canned pineapple, see below)3 Tbsp. vinegar3 Tbsp. sugar
2 cups whipping cream
2 large cans mandarin oranges1 20-oz can pineapple chunks or tidbits (get the kind in its own juice, not syrup)2 cups sliced grapes (I use 1 cup purple & 1 cup green)1-2 cups small marshmallows Drain fruit very well.
Mix 1st set of ingredients and cook until thickened. Let cool.
Whip cream until peaks form. Add cooled mixture to whipped cream.
Add the fruit and marshmallows. Mix. Refrigerate for at least 2 hours.
